Apple muesli buns

Ingredients
- 300 ml (1 1/3 cups) (1 1/3 cups) plant-based milk ( e.g. soy or oat)
- 10 gr (0.4 oz.) fresh yeast
- 2 Tbsp sugar (e.g. coconut blossom sugar)
- 500 gr (4 cups) flour ( e.g. wheat, spelt or a mixture of both)
- 1/2 tsp salt
- 2 Tbsp lant-based yogurt
- 100 gr (3/4 cup) muesli or oats
- 2 apples (small )
- 1 spritzer lemon juice
- 2 tsp cinnamon
- 1-2 Tbsp bright jam or cream for coating
Instructions
- Slightly warm up the milk (lukewarm)
- Stir in yeast and sugar until everything is dissolved
- Add flour, salt and yogurt and let the dough rise at a warm spot until the size has doubled (approx. 1-2 hours)
- Wash and grate the apples and squirt some lemon juice on them
- Add apples, cereal/oatmeal and cinnamon to the dough and knead together
- Preheat the oven to 180°C (356°F)
- Slightly grease a muffin tray, separate the dough in 12 pieces, shape them round and place them into the muffin tray (if you don’t have a muffin tray, place these 12 rolls onto a baking tray
- Let them rise once more for 15-20 minutes covered with a dish cloth
- Coat them with cream or jam and bake them for 20-25 minutes
