Vegan watermelon feta salad

Ingredients
- 1/2 watermelon (medium size)
- 100 gr (3.5 oz.) vegan feta ((i.e. from Bedda))
- 1 bunch resh rocket lettuce
- 1 hand full salted pistachios
Dressing:
- 2 tsp Dijon mustard (coarse or fine)
- 2 tsp honey (or maple syrup)
- 2 tsp apple cider vinegar
- 2 tsp olive oil
- Spritzer lemon juice
- salt & pepper
Instructions
- Slice the watermelon in edible pieces
- Wash and slightly chop the rocket lettuce
- Dice the feta
- Peel the pistachios and roughly chop them
- Serve everything in a bowl and coat with the dressing
Dressing
- Add all ingredients into a jar and shake well
Notes
Tip from my kitchen: pick a ripe watermelon — it sounds hollow when tapped and has a yellowish patch where it rested on the ground. Cut the flesh into pieces and let it drain briefly in a colander so the salad does not turn watery. Fold in the vegan feta (I love Bedda) and the dressing only just before serving. A handful of fresh mint makes it even more summery, and a pinch of chili adds a nice kick if you like it spicy.
