Tomato peach salad

Ingredients
- 350 gr (12 oz.) cocktail tomatoes (different colors if possible)
- 4 flat peaches (or 2 regular peaches)
- 1 cucumber (or 3 small ones)
- 30 gr (1 oz.) pine nuts
- 2-3 twigs red currants
Dressing
- 1/2 bunch of fresh basil
- 2 Tbsp pomegranate <strong>molasses</strong> (alternatively juice)
- 3 Tbsp balsamic vinegar (or apple cider vinegar)
- 3 Tbsp olive oil
- 1 tsp maple syrup
- salt & pepper
Instructions
- 1.Cut the tomatoes in half, slice the peaches
- 2.Peel the cucumbers and slice them
- 3.Roast the pine nuts in a fat free pan
- 4.Add everything into a bowl or place on a platter
Dressing
- 1.Wash and finely chop the basil (save some leaves for decoration)
- 2.Mix with all other ingredient and season the dressing with salt and pepper
- 3.Pour the dressing over the salad, mix everything well and serve with pine nuts, currants and basil leaves.
Notes
Tip from my kitchen: use truly ripe, fragrant peaches and colorful tomatoes, they make all the difference. Toss the salad with the dressing only just before serving so everything stays crisp. Add the basil fresh and tear it roughly so it keeps its aroma. If you like, scatter a few red currants on top for color and a fine tartness. Enjoy it fresh, straight away.
