Sweet quinoa with apple compote

Ingredients
Quinoa
- 1 cup coconut milk ((approx. 200 ml))
- 1 cup water ((approx. 200 ml))
- 200 gr (7 oz.) quinoa
- 1 pinch of salt
- 1 tsp vanilla extract or powder
- 1 tsp cinnamon
- optional: 1-2 Tbsp sweetness of your choice (e.g. maple syrup)
Apple compote
- 2 apples
- 1 pear
- 1 tsp cinnamon
also:
- 1-2 Tbsp fruit puree
- 2-4 Tbsp coconut yogurt (or soy)
- 2-3 Tbsp almonds (or other nuts)
- 1-2 tsp cashew or almond butter
Instructions
Quinoa
- Rinse quinoa well under running water
- Add it to a pot along with coconut milk and water
- Add salt, vanilla and cinnamon
- Bring to a boil and then let it simmer at medium heat for 10-15 minutes
- Once the quinoa is soft, turn the stove off and let the quinoa steam off
- Let it cool off
Apple compote
- Peel apples and pears and cut them in small slices
- Put them in a pot along with some water and cinnamon
- Let them simmer for approx. 5-10 minutes until the fruits are soft
- Let them cool off
Parfait
- Add the quinoa into a glass, yogurt on top, then the fruit puree, then the compote and serve with nut puree
- You can easily layer it the night before (without the nuts) and then eat it for breakfast
Notes
Tip from my kitchen: rinse the quinoa really well, otherwise the saponins on the outer coating can make it taste bitter. Cooked in coconut milk it turns lovely and creamy with a gentle sweetness, which is why I barely add any extra sweetener and let the fruit compote do the work. If you like it sweeter, stir in 1 to 2 tablespoons of maple syrup. The parfait layers beautifully the night before (add the nuts in the morning), so you have breakfast ready for 2 to 3 days. Any leftover quinoa is mild enough to use in a savory bowl too.
