Stuffed peppers with spinach

Ingredients

  • 2 peppers
  • 1 onion
  • 1 garlic clove
  • 150 gr 5 oz. fresh spinach
  • 2 Tbsp olive oil
  • 150 gr 5 oz. ricotta/vegan cream cheese
  • Nutmeg
  • Salt
  • Pepper
  • 1 can of chopped tomatoes
  • Italian herbs
  • Grated cheese (vegan)
  • Fresh basil & thyme
  • 200 gr 7 oz. Orzo/Kritharaki

Instructions

  1. 1.Wash the 2 peppers, cut them in half and clean them out
  2. 2.Finely chop onions and garlic and roast them in olive oil
  3. 3.Roughly chop the fresh spinach and add it to the pan
  4. 4.Roast for about 3–5 minutes
  5. 5.Add ricotta and quickly heat it up
  6. 6.Season with nutmeg, salt and pepper
  7. 7.Preheat the oven to 200°C (392°F)
  8. 8.Put the tomatoes into an ovenproof dish and season them with salt, pepper and Italian herbs
  9. 9.Place the pepper halves inside and fill them with the spinach ricotta mixture
  10. 10.Sprinkle grated cheese and basil on top
  11. 11.Bake for 30 minutes
  12. 12.In the meantime prepare the orzo/kritharaki according to the packet instructions
  13. 13.Serve the peppers with the sauce and the noodles

Notes

Instead of orzo you can serve rice, bulgur, quinoa or couscous as a side. For a lighter, low-carb version, just enjoy the peppers with a big salad.
