Stuffed peppers with spinach

Ingredients
- 2 peppers
- 1 onion
- 1 garlic clove
- 150 gr 5 oz. fresh spinach
- 2 Tbsp olive oil
- 150 gr 5 oz. ricotta/vegan cream cheese
- Nutmeg
- Salt
- Pepper
- 1 can of chopped tomatoes
- Italian herbs
- Grated cheese (vegan)
- Fresh basil & thyme
- 200 gr 7 oz. Orzo/Kritharaki
Instructions
- 1.Wash the 2 peppers, cut them in half and clean them out
- 2.Finely chop onions and garlic and roast them in olive oil
- 3.Roughly chop the fresh spinach and add it to the pan
- 4.Roast for about 3–5 minutes
- 5.Add ricotta and quickly heat it up
- 6.Season with nutmeg, salt and pepper
- 7.Preheat the oven to 200°C (392°F)
- 8.Put the tomatoes into an ovenproof dish and season them with salt, pepper and Italian herbs
- 9.Place the pepper halves inside and fill them with the spinach ricotta mixture
- 10.Sprinkle grated cheese and basil on top
- 11.Bake for 30 minutes
- 12.In the meantime prepare the orzo/kritharaki according to the packet instructions
- 13.Serve the peppers with the sauce and the noodles
Notes
Instead of orzo you can serve rice, bulgur, quinoa or couscous as a side. For a lighter, low-carb version, just enjoy the peppers with a big salad.
