Coconut Quinoa Porridge with Tropical Fruit

Ingredients

For the porridge

  • 75 gr (2.6 oz.) quinoa
  • 250 ml (1 cup) water
  • 1 pinch salt
  • 50 gr (1.8 oz.) fine rolled oats
  • 250 ml (1 cup) coconut milk (canned)
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 2 Tbsp maple syrup

For the topping

  • 2 to 3 Tbsp coconut flakes
  • 1 mango (ripe)
  • 2 to 3 passion fruit
  • 1/2 pineapple
  • 1/2 papaya

Equipment: Fine sieve, Medium pot with lid, Small frying pan, Cutting board, Sharp knife

Instructions

Cook the quinoa

  1. 1.Rinse the quinoa thoroughly in the fine sieve under running water so the bitter coating washes away.
  2. 2.Bring the quinoa, water and salt to a boil in the pot, turn the heat to low and simmer covered for 15 minutes, until the water is absorbed.

Finish the porridge

  1. 1.Add the oats, coconut milk, cinnamon, vanilla extract and maple syrup to the quinoa and stir well.
  2. 2.Simmer over low heat for another 5 minutes, stirring now and then, until the porridge is creamy.

Fruit and coconut flakes

  1. 1.Meanwhile wash, peel and dice the fruit into bite-sized pieces. Halve the passion fruit and scoop out the pulp with a spoon.
  2. 2.Toast the coconut flakes in the small dry pan over medium heat until golden, keeping them moving, they darken quickly.

Serve

  1. 1.Divide the porridge between bowls, arrange the fruit on top and sprinkle with the toasted coconut flakes. Serve straight away.

Notes

Tip from my kitchen: this amount feeds 2 hungry people or 3 with a normal appetite, depending on how you wake up. Use canned coconut milk, not the thin drinking kind from a carton, or the porridge loses its creaminess. If the can has set solid, stand it in warm water for a moment and stir. I toast a double batch of coconut flakes, they keep in a screw-top jar for a week and make yogurt or overnight oats crunchier too. If you cannot find passion fruit, a little lime zest brings the same acidity against the sweetness of the coconut milk.
