Black Chia Pudding

- 1 cup black water (activated charcoal water) (approx. 250 ml (8.5 fl oz.))
- 4 tbsp chia seeds
- vanilla (ground or a dash of extract)
- 2 tsp maple syrup (or to taste)
- plant-based yogurt (for serving)
- fresh berries (for serving, e.g. blackberries)
Equipment: Glass or mason jar
Instructions
- 1.Stir the black water, chia seeds, vanilla and maple syrup together well in a glass or bowl.
- 2.After about 10 minutes, stir vigorously once more so no lumps form.
- 3.Cover and let soak in the fridge overnight (at least 2-3 hours).
- 4.In the morning, give it a stir and serve topped with plant-based yogurt and fresh berries.
Notes
A tip from my kitchen: no black water at hand? Simply stir 1/4 to 1/2 tsp of food-grade activated charcoal powder into still water or plant-based milk – with plant milk the pudding turns out even creamier. Do give the pudding another good stir after the first 10 minutes so it thickens evenly. In a sealed jar it keeps for 3-4 days in the fridge – ideal for meal prep. And do note: activated charcoal can reduce the absorption of medication, so leave a few hours between the two.
