Hello lovelies, do you like waffles? We love them and therefore I have a new summer recipe for you today: waffles with strawberry mint sauce! The main harvesting season for strawberries in Switzerland is already over but meanwhile there are a few local species that are still available throughout the whole summer. By now you can also harvest these delicious red fruits in the garden over a longer period. I’m not sure how it is with you but the mint leaves in my garden grow pretty uncontrolled. Since I love mint and add it to my drinking water daily and also use it in many other recipes I’m of course very happy about it!
The combination of strawberries and fresh mint is very tasty and was very well received by the kids. I used a mix of spelt flour and buckwheat flour for the waffles. Buckwheat flour is a pseudo grain, it’s gluten free and I like the nutty, bitter flavor of it. It contains more zinc, copper and manganese than most grain types and is also a good protein supplier. Buckwheat flour crepes for example are very delicious and you can have them either sweet or savory.

You can also just use spelt flour alone to bake these waffles, in case you cannot find the buckwheat flour or don’t like the taste of it. These waffles are a delicious summer snack, perfect for a brunch or also very tasty as a dessert – maybe with a ball of ice cream :-). And I’m not lying when I’m telling you that the kids loved the sauce so much, they even licked off their plates (not that we would do such things here).
