Hey Lovelies, I really hope you are not tired yet of all the fig recipes, because well here comes another one! Fig season doesn’t last long, so we better make the best of it. The recipe I’m sharing today is for easy, vegan fig and walnut muffins. They don’t require much time to make and are a perfect afternoon treat or also delicious for breakfast or a Sunday brunch with the family. I even packed some of them in my lunch box for a picnic when we had nice weather last week. If you don’t like figs, you could also replace them with other fruits like apples, pears or I think even plums would work really well with the recipe.

And as you can see – even the batter is kids approved already :-). They also liked the muffins a lot.

So here is the recipe:

  • 6-8 fresh figs (depending on the size)
  • 1 lime
  • 70 gr walnuts
  • 150 gr raw cane or coconut blossom sugar
  • 100 ml sparkling water
  • 100 ml plant based milk
  • 100 gr vegan butter
  • 300 gr flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • pinch of salt


  1. Cut 4 of the figs in pieces (if you have small ones, you can use more). Chop the nuts roughly, set both aside.
  2. Add the sugar to mixing bowl, add the zest and juice of half a lime, vegan butter (cut in pieces) and mix. Add the milk, water, flour, salt, baking soda and powder and mix well until well combined. Add the figs and walnuts and spoon them under.
  3. Preheat the oven to 180 degree.
  4. Line a muffin pan with papers and add the batter - it’s enough for 12 muffins.
  5. Cut the rest of the figs in slices and add 1 slice on each muffin.
  6. Bake for 25-30 minutes.

You can enjoy them just plain or sprinkled with some powdered sugar.
