Sweet quinoa with apple compote
A delicious Parfait with quinoa, yogurt and apple, suitable for breakfast or a snack.

Ingredients
Quinoa

coconut milk
(approx. 200 ml)

water
(approx. 200 ml)

gr (7 oz.)
quinoa

pinch
of salt
1
tsp
vanilla extract or powder
1
tsp
cinnamon
optional: 1-2 Tbsp sweetness of your choice (e.g. maple syrup)
Apple compote

also:

fruit puree

coconut yogurt (or soy)

almonds (or other nuts)

cashew or almond butter
Instructions
Quinoa
Rinse quinoa well under running water
Add it to a pot along with coconut milk and water
Add salt, vanilla and cinnamon
Bring to a boil and then let it simmer at medium heat for 10-15 minutes
Once the quinoa is soft, turn the stove off and let the quinoa steam off
Let it cool off
Apple compote
Peel apples and pears and cut them in small slices
Put them in a pot along with some water and cinnamon
Let them simmer for approx. 5-10 minutes until the fruits are soft
Let them cool off
Parfait
Add the quinoa into a glass, yogurt on top, then the fruit puree, then the compote and serve with nut puree
You can easily layer it the night before (without the nuts) and then eat it for breakfast
