Sweet quinoa with apple compote

A delicious Parfait with quinoa, yogurt and apple, suitable for breakfast or a snack.

Ingredients

Quinoa

  • 1 cup coconut milk (approx. 200 ml) 
  • 1 cup water (approx. 200 ml) 
  • 200 gr (7 oz.) quinoa 
  • 1 pinch of salt 
  • 1 tsp vanilla extract or powder
  • 1 tsp cinnamon
  • optional: 1-2 Tbsp sweetness of your choice (e.g. maple syrup)

Apple compote

  • 2 apples
  • 1 pear
  • 1 tsp cinnamon

also:

  • 1-2 Tbsp fruit puree
  • 2-4 Tbsp coconut yogurt (or soy)
  • 2-3 Tbsp almonds (or other nuts)
  • 1-2 tsp cashew or almond butter

Instructions

Quinoa

  • Rinse quinoa well under running water 
  • Add it to a pot along with coconut milk and water 
  • Add salt, vanilla and cinnamon
  • Bring to a boil and then let it simmer at medium heat for 10-15 minutes 
  • Once the quinoa is soft, turn the stove off and let the quinoa steam off 
  • Let it cool off 

Apple compote

  • Peel apples and pears and cut them in small slices 
  • Put them in a pot along with some water and cinnamon
  • Let them simmer for approx. 5-10 minutes until the fruits are soft 
  • Let them cool off

Parfait

  • Add the quinoa into a glass, yogurt on top, then the fruit puree, then the compote and serve with nut puree 
  • You can easily layer it the night before (without the nuts) and then eat it for breakfast
