Almond sponge cake with berries


  • 100 gr ground almonds
  • 150 gr sugar i.e. coconut blossom sugar
  • 1 tsp vanilla extract or vanilla powder
  • 6 Tbsp coconut oil melted
  • 200 gr spelt flour
  • 4 tsp baking powder
  • 250 ml sparkling water
  • 1 Tbsp cider vinegar
  • cream i.e. whippable soy
  • Berries


  • Preheat the oven to 180°C (356°F)
  • Mix the almonds, sugar and vanilla
  • Add flour and baking powder
  • Add oil and sparkling water and mix well
  • Add 1 Tbsp cider vinegar at the end
  • Grease a springform or inlay it with baking paper
  • Put the dough into the springform and bake for 30-40 minuten backen – check with a stick if well done
  • Let cool off
  • Whip the cream and sweeten it as you like – I added some elderflower sirup
  • Put the whipped cream on top of the cake and add your berries to it
