Crispy orange-carrot waffles


  • 3 carrots midsized
  • 1 orange
  • 3 Tbsp chia seeds
  • 70 gr vegan butter
  • 60 gr coconut blossom sugar
  • 1 Tbsp peanut butter optional
  • 160 gr spelt flour
  • 150 ml vegan buttermilk plant based milk mixed with 1 Tsp apple cider vinegar
  • 100 ml sparkling water
  • 1 Tsp backing powder
  • orange zest
  • vanille extract
  • Pinch of salt
  • 1/2-1 Tsp cinnamon
  • some clove


  • Mix the milk with the apple cider vinegar and let sit for some time (the cider will thicken the milk a bit)
  • Peel the carrots and finely grate them or blitz them in a food processor
  • Add the peeled orange, finely chop or also blitz it
  • Add the butter, chia seeds, sugar, peanut butter, vanilla, cinnamon, clove and orange zest (as much as you like) and mix well
  • Add the flour and baking powder and gradually mix in the milk and water until you have a smooth batter
  • Bake delicious waffles in your waffle iron
