Cool the rice according to the package instructions (or use leftover rice)
Let cool off and than mix with 6-8 Tbsp coconut milk
Add 2-3 Tbsp maple syrup (depending how sweet you like it) and add vanilla
Put in 4 jars
Peel the mango and puree the fruit flesh
Add on top of the rice
Wash the strawberries, cut the green stem and puree with 3-4 Tbsp coconut milk and 1-2 tbsp maple syrup
Add to the jars
Top with granola and fresh berries - serve chilled
