Vegan stick bread with tofu wiener

Ingredients
- 1/4 dice (approx. 10-15 gr fresh yeast (or 2 tsp dried yeast)
- 300 ml (1 ¼ cup) soy milk
- 1 Tbsp raw cane sugar
- 400 gr (3 cups) flour i.e. spelt
- 1 tsp salt
- 2 Tbsp olive oil
- 2 Tbsp fried onions
- 2 packages <strong>Taifun Tofu - Mini-Wiener</strong>
- 1 Zucchini
Instructions
- Mix yeast with slightly warm milk and sugar and stir until fully dissolved
- Add flour, salt and olive oil and knead to a smooth dough
- Cover it up and let the dough rise in a slightly oiled bowl for approx. 2-3 hours
- Knead the fried onions into the dough
- Prepare sticks or skewers at the fireplace
- Knead the dough once again, slice the zucchini into thin stripes using a potato peeler
- Wrap a zucchini slice around the wiener and then a flat piece of the dough. Wrap them onto the sticks and bake them until they are well done
Notes
tip from my kitchen: let the dough rise the full 2–3 hours so the stick bread turns out fluffy inside. flatten the dough and wind it in a spiral around clean, carved sticks, pressing the ends down well so nothing slides off. bake it over the embers, not the open flame, turning constantly until it is golden and sounds hollow. with kids, the wrapping is the best part; a little patience at the fire is rewarded with the tastiest homemade bread.
