Vegan crêpes – basic recipe

Ingredients

  • 200 gr flour (eg spelt flour)
  • 400 vegetable milk (for example soy or oats)
  • 3 tablespoons of sugar (e.g., coconut sugar or xylit)
  • 1 tbsp coconut oil
  • 1 teaspoon baking powder
  • 1 tsp vanilla extract or powder
  • 1 pinch of salt
  • 1-2 pinches of cinnamon

Instructions

  1. 1.Melt the coconut oil
  2. 2.Mix all ingredients together in a bowl to a smooth batter
  3. 3.Let rest briefly and then bake the crêpes in a non-stick pan
  4. 4.Fill to your heart's desire

Notes

tip from my kitchen: let the batter rest briefly so it becomes smoother and the crêpes are easier to flip. for extra-thin crêpes use a fairly runny batter and a well-coated pan, so you barely need any fat. sweet, they are lovely with cinnamon sugar, jam or chocolate; for a savoury version simply leave out the sugar and fill them to your heart's desire.
