Sweet Potato Rösti with Cheese and Fried Egg

Ingredients
For the rösti
- 300 gr (10.5 oz.) sweet potatoes (about 2 medium)
- 300 gr (10.5 oz.) potatoes (about 2 medium, mostly waxy)
- 1 onion
- 1 tsp salt
- 1 pinch pepper
- ½ tsp paprika
- 4 sprigs fresh thyme
- 3-4 Tbsp butter (for frying)
- 50 gr (1.8 oz.) grated cheese (for example Gruyère)
To serve
- 2-4 eggs
Equipment: coarse grater, clean kitchen towel, large nonstick frying pan, large plate or lid for flipping, mixing bowl, second pan for the fried eggs
Instructions
Prepare the potatoes
- 1.Peel the sweet potatoes and potatoes and grate them on a coarse grater.
- 2.Put the grated potatoes in a clean kitchen towel and squeeze firmly to remove as much liquid as possible.
- 3.Finely chop the onion and mix it with the grated potatoes in a large bowl.
- 4.Wash the thyme and pick the leaves off the sprigs.
- 5.Add the salt, pepper, paprika and half of the thyme and mix everything well.
Fry the rösti
- 1.Melt 1 to 2 Tbsp of butter in a large frying pan over medium heat.
- 2.Add half of the potato mixture and press it flat with a spatula.
- 3.Fry for 10 to 15 minutes until the underside is golden.
- 4.Place a large plate or lid on the pan and turn the pan over so the rösti lands on the plate.
- 5.Add a little butter to the pan and slide the rösti back in with the uncooked side down.
- 6.Fry for another 10 to 15 minutes. Toward the end, sprinkle half of the cheese over it and let it melt under a lid.
- 7.Fry a second rösti the same way with the remaining potato mixture and cheese.
Fried eggs and serving
- 1.Heat a little butter in a second pan and fry 2 to 4 eggs, as you like.
- 2.Top the rösti with the fried eggs, sprinkle with the remaining thyme and serve right away.
Notes
Tip from my kitchen: keep the first rösti warm in the oven at 80°C (176°F) while the second one fries, so both reach the table at the same time. In the photos I dusted the fried eggs with a little paprika, which looks pretty and suits the sweet potato. Serve a green salad on the side if you like. The rösti is just as good without cheese, simply leave out the Gruyère.
