Pumpkin burger

Vegan pumpkin burger patties with a golden sesame crust

Ingredients

  • 1/2 butternut pumpkin (medium sized)
  • 1 onion
  • 50 gr (1.8 oz.) oats
  • 50 gr (1.8 oz.) dried roasted onions
  • 1 tsp mustard
  • 1 tsp liquid smoke or paprika
  • tumeric
  • salt
  • pepper
  • sesame

Equipment: Baking oven, Frying pan

Instructions

  1. 1.Preheat the oven to 180 degree (356°F). Cut the pumpkin in pieces, drizzle with some olive oil and bake for 25-35 minutes until soft.
  2. 2.Let cook down and mash with a fork or puree in a food processor.
  3. 3.Chop the onions and mix all the ingredients (except the sesame) in a bowl.
  4. 4.Season with the spices.
  5. 5.Let rest in the fridge for 15-20 minutes.
  6. 6.With wet hands form patties and coat them with sesame seeds.
  7. 7.Heat olive oil in a pan and bake the patties 4-5 minutes from both sides until golden.

Notes

Tip from my kitchen: the mixture is meant to be quite soft – that is what makes the burgers creamy inside – so shape the patties with wet hands and don't skip the rest in the fridge. If it still won't hold, a spoonful more oats fixes it. The patties taste just as good the next day, briefly crisped up in a pan, and they freeze well once fried.
