Matcha Waffles with White Chocolate

Ingredients
For the waffle batter
- 250 gr (8.8 oz.) flour
- 2 to 4 tsp matcha powder (to taste, 3 tsp for a clear green)
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 to 4 Tbsp icing sugar
- 2 eggs
- 250 ml (1 cup) milk
- 100 gr (3.5 oz.) butter (melted, slightly cooled)
- 1/2 to 1 lime (juice only)
- 1 tsp vanilla extract
- 100 gr (3.5 oz.) white chocolate (roughly chopped)
To serve
- seasonal fruit (e.g. strawberries, figs or grapes)
- 2 Tbsp white chocolate (grated or in pieces)
- icing sugar (for dusting, optional)
Equipment: Waffle iron, 2 bowls, Whisk, Fine sieve, Cooling rack
Instructions
Batter
- 1.In a large bowl mix the flour, matcha powder, baking powder, baking soda, salt and icing sugar, ideally through a sieve so the matcha does not form lumps.
- 2.In the second bowl whisk the eggs, add the milk, melted butter, lime juice and vanilla and stir to combine.
- 3.Pour the wet ingredients into the dry ones and stir into a smooth batter.
- 4.Fold in the roughly chopped white chocolate.
Cook the waffles
- 1.Preheat the waffle iron and grease it lightly.
- 2.Add a ladle of batter to the hot iron and cook the waffle on a medium setting until golden green, not too dark, otherwise the matcha loses its color.
- 3.Lay the finished waffles out singly on a cooling rack so they stay crisp, and repeat until all the batter is used up.
Serve
- 1.Arrange the waffles with fresh fruit, grated white chocolate and a little icing sugar if you like, and serve warm.
Notes
Tip from my kitchen: do sift the matcha with the flour, it clumps easily, and a green lump in a waffle tastes bitter. I chop the white chocolate roughly, small pieces melt away completely in the iron, bigger ones stay as sweet little islands. The lime is not a decorative citrus, it takes the heaviness out of the white chocolate and makes the waffles fresh. Do not stack the finished waffles, singly on the rack they stay crisp. Leftover waffles get frozen individually here and go into the toaster straight from frozen in the morning.
