Frozen Yogurt Clusters with Berries & Chocolate

Ingredients
- 100 gr (3.5 oz.) Greek yogurt
- 1 tsp vanilla extract
- 1-2 tsp honey (to taste)
- 150 gr (5.3 oz.) fresh berries (e.g. strawberries, blueberries)
- 1-2 Tbsp dried blueberries or strawberries
- 3 tsp nuts (e.g. cashews, pistachios)
- 100 gr (3.5 oz.) chocolate (dark or mixed)
- 1 tsp coconut oil
- nuts, dried fruit or seeds (to decorate)
Instructions
Yogurt mixture
- Stir the Greek yogurt with the vanilla extract and honey in a bowl.
- Wash and finely chop the fresh berries, then fold them in together with the dried fruit and nuts.
Shape the clusters
- Spoon small mounds of the yogurt-berry mixture onto a parchment-lined baking sheet.
- Put the sheet in the freezer until the clusters are firm (about 1 to 2 hours).
Chocolate
- Melt the chocolate together with the coconut oil over a water bath or in the microwave.
- Lift the firm clusters off the parchment and brush them with the chocolate.
- Decorate with nuts and dried fruit as you like and keep in the freezer until serving.
Notes
Tip from my kitchen: use really thick Greek yogurt, then the clusters set nicely and don't spread on the tray. I freeze them through for about 1 to 2 hours before coating them in chocolate – that keeps the shell crisp. Instead of brushing, you can also dip the clusters briefly into the chocolate. They make a perfect snack or a little dessert for hot days and keep for weeks in the freezer.
