Crispy Vegan Apple Chia Waffles

Ingredients
- 1 1/2 apples (or two if small)
- 70 gr (2.5 oz.) vegan butter
- 60 gr (2.1 oz.) coconut sugar
- 2 1/2 tbsp Chia seeds
- Some vanilla
- 160 ml (2/3 cup) vegan buttermilk (made with plantbased milk and 1 tsp apple cider vinegar)
- 100 ml (1/2 cup) sparkling water
- 150 gr (5.3 oz.) flour
- 1 tsp baking powder
- Pinch of salt
Instructions
- 1.Mix the milk and vinegar and set aside for ca 10 minutes so it thickens. Grate the apples and set aside as well. In a Mixing Bowl, combine the butter and sugar and mix well. Add the Chia seeds, vanilla, flour, buttermilk, water, baking powder and salt and mix until well combined. Add the grated apples and just spoon them under. Heat your waffle iron and bake delicious apple waffles.
Notes
Tip from my kitchen: eat the waffles fresh from the iron, that's when they're crispiest. Leftover waffles can be cooled and frozen – they crisp up again in the toaster. If you prefer them less sweet, reduce the coconut sugar, and add a squeeze of lemon to the grated apple so it doesn't turn brown.
