Chocolate Orange Mousse with Aquafaba

Ingredients
- 120 gr dark chocolate
- 1 Tsp vanilla extract
- Zest of 1/2 - 1 organic orange
- Aquafaba (liquid of one glas of chickpeas, e.g. Alnatura)
- 2 Tbsp powdered sugar
Instructions
- 1.Melt the chocolate over a water bath and let cool down a bit
- 2.Drain the chickpeas and take the liquid - beat it with a kitchen machine or hand mixer for 5-20 minutes until very fluffy and peaks form
- 3.Add in the powdered sugar while beating
- 4.Add fluffy mixture to the melted chocolate and fold it in, add the vanilla and orange zest
- 5.Decorate into glasses and let cool in the fridge for 2-3 hours
Notes
Tip from my kitchen: this mousse is a wonderful make-ahead dessert – you can prepare it a day in advance and, covered, it keeps for about 2 days in the fridge. Whip the aquafaba really stiff, just like egg white, so the mousse turns out extra airy. Vary the amount of orange zest to taste, and for a layered dessert combine the mousse with coconut whipped cream and rhubarb ginger compote.
