Chocolate Granola

Ingredients
- 1 1/2 cups oats
- 1/2 cups coconut chips
- 1/2 cup walnuts
- 1/2 cup pecan nuts
- 3 Tbsp coconut blossom sugar
- 3 Tbsp cacao powder
- 4 Tbsp coconut oil
- 3 Tbsp chocolate spread (I used a dark chocolate vegan one)
- vanilla
- 1 Tsp cinnamon
- 2 Tbsp dried pomegranate arils (or any other dried fruits)
Equipment: Baking oven
Instructions
- 1.Roughly chop the nuts ( I like bigger pieces in my granola).
- 2.In a bowl mix the oats, coconut chips, coconut blossom sugar, cinnamon, dried nuts and cacao.
- 3.Preheat the oven to 150 degree (302°F).
- 4.In a small pan mix the oil, vanilla and chocolate and melt.
- 5.Add to the dry ingredients and until well combined.
- 6.Spread on a baking pan and bake for 20-30 minutes.
- 7.Let cool down and enjoy.
Notes
Tip from my kitchen: stored in an airtight jar the granola stays crunchy for a good 2 weeks – just let it cool completely before filling the jar, otherwise it turns soft. If you don't have chocolate spread, simply melt some dark vegan chocolate into the warm coconut oil. And feel free to vary the nuts and dried fruit with whatever you have in the cupboard.
