Chocolate Banana Porridge with Caramelized Banana

Ingredients
For the porridge
- 50 gr (1.8 oz.) fine rolled oats
- 300 ml (1 1/4 cups) plant milk (e.g. oat or almond milk, 270 to 300 ml depending on how thick you like it)
- 1 ripe banana (mashed with a fork)
- 1 Tbsp cocoa powder (unsweetened)
- 1/2 tsp cardamom (ground, up to 1 tsp to taste)
- 1 tsp chia seeds
- 1 tsp vanilla extract
- 1 pinch salt
- 1 to 2 Tbsp maple syrup (to sweeten)
For the topping
- 1 to 2 bananas (ripe, but firm)
- 1 Tbsp coconut oil
- 1 to 2 Tbsp brown sugar
- 2 Tbsp granola (vegan)
- 20 gr (0.7 oz.) dark chocolate (vegan, at least 70 %, in pieces)
- 2 tsp vegan chocolate spread (e.g. hazelnut chocolate spread, optional)
Equipment: Pot, Non-stick pan, Fork for mashing the banana, Wooden spoon or whisk, 2 bowls
Instructions
Cook the porridge
- 1.Put the oats, plant milk and mashed banana into a pot, add the cocoa powder, cardamom, chia seeds, vanilla and salt and stir everything well.
- 2.Bring to the boil over medium heat, stirring now and then.
- 3.Reduce the heat and let it simmer gently for 5 to 7 minutes, stirring often, until the porridge is creamy. If it gets too thick, add another splash of plant milk.
- 4.Take it off the heat and sweeten to taste with maple syrup.
Caramelize the banana
- 1.Meanwhile peel the bananas for the topping and halve them lengthwise.
- 2.Heat the coconut oil in a non-stick pan, add the brown sugar and let it melt while stirring until it is completely liquid.
- 3.Lay the banana halves in the pan cut side down and fry them for 1 to 2 minutes, turning once, until soft and golden brown.
Serve
- 1.Divide the porridge between 2 bowls, lay the caramelized banana halves on top and finish with granola, pieces of chocolate and a spoonful of chocolate spread each. Enjoy straight away.
Notes
Tip from my kitchen: fine rolled oats make the porridge really creamy, with coarse oats it takes 2 to 3 minutes longer and stays chewier. Start with half a teaspoon of cardamom, it is strong, and add more at the end if you like. The banana for the topping should be firm, an overripe one dissolves in the hot sugar. With 2 caramelized bananas the porridge properly fills 2 people, with 1 banana it is more of a big bowl for one hungry person. The chocolate spread is a luxury and can go, then use a few more pieces of dark chocolate instead.
