Carrot bread & apple carrot jam with the Panasonic Croustina

Ingredients
Carrot bread:
- 1 tsp dried yeast
- 400 gr 3 cups spelt flour type 630
- 2 tsp salt
- 1 tsp sugar
- 1 Tbsp olive oil
- 150 gr 5 oz. carrots
- 200 ml 3/4 cup water
- 50 gr 1/3 cup sunflower seeds
Apple carrot jam:
- 350 gr 12 oz. apples
- 150 gr 5 oz. carrots
- 1 piece of ginger (1-2 cm/0.4-0.8“)
- Juice of 2 lemons
- 250 gr 1 ¼ cup jam sugar 2:1
Instructions
Carrot bread:
- 1.Finely grate the carrots
- 2.Put all ingredients one after the other into the Panasonic Croustina
- 3.Choose program 1
- 4.Right before the baking starts, sprinkle some sunflower seeds onto it
Apple carrot jam:
- 1.Wash and finely grate the apples (you don’t need to peel them)
- 2.Immediately mix them with lemon juice
- 3.Finely grate the carrots and add them to the apples
- 4.Add apples, carrots and sugar into the Panasonic Croustina alternatingly
- 5.Finely grate the ginger and add it
- 6.Choose program 18 and set time to 1 hour and 10 minutes
Notes
Tip from my kitchen: in a bread maker the machine handles the kneading, proofing and baking for you. You can just as easily bake the carrot bread in the oven, though – knead the dough by hand, let it rise for about 1 hour, shape it into a loaf and bake at 220 °C for roughly 35 to 40 minutes. My apple-carrot jam was done a touch faster than the program suggested, so check on it now and then so nothing burns. Fill it hot into sterilised jars and it keeps for months. Let the finished bread cool completely and store it in a bread bin to stay fresh for 2 to 3 days; sliced, it also freezes beautifully.
