Apple Cinnamon Waffles with Freshly Grated Apple

Ingredients
For the batter
- 250 gr (8.8 oz.) flour
- 2 tsp baking powder
- 1-2 tsp cinnamon
- 2 Tbsp brown sugar
- 1 pinch salt
- 2 eggs
- 360 ml (1 1/2 cups) milk
- 60 gr (2.1 oz.) melted butter (or oil)
- 1 tsp vanilla extract
For the apples
- 2 apples (about 200 gr (7 oz.), tart)
- 1 Tbsp lemon juice
Equipment: large bowl, second bowl, whisk, grater, waffle iron, wire rack
Instructions
Mix the batter
- 1.Combine the flour, baking powder, cinnamon, brown sugar and the salt well in a large bowl.
- 2.In a second bowl whisk the eggs smooth with the milk, the melted butter and the vanilla extract.
- 3.Add the wet ingredients to the dry ones and stir only until a smooth batter forms. Do not beat it for long or the waffles turn tough.
Prepare the apples
- 1.Peel the apples, remove the cores and grate them on the fine side of the grater.
- 2.Mix them with the lemon juice straight away so they do not brown, then squeeze them briefly by hand and fold them into the batter.
Bake the waffles
- 1.Preheat the waffle iron completely and grease it lightly if it is not nonstick.
- 2.Spoon a portion of batter into the middle, close it and bake for 3 to 4 minutes until the waffles are golden brown and crisp. How much batter per waffle depends on your iron.
- 3.Lay the finished waffles out singly on a wire rack rather than stacking them, so they stay crisp.
Serve
- 1.Serve warm, dusted with powdered sugar or with whipped cream, caramel sauce and extra cinnamon.
Notes
Tip from my kitchen: the pictures show the Sunday version. For that I cook 2 extra apples, diced, with a little butter, brown sugar and cinnamon for 5 minutes until soft and spoon them over the waffles with caramel sauce, whipped cream and a scoop of vanilla ice cream. On a weekday powdered sugar is plenty. Grate the apples really finely, coarse shreds press through the waffle pattern and burn. And preheat the iron a minute longer than you think, that is the whole difference between soft and crisp.
