Apple-Carrot Jam

Ingredients
- 350 g (12 oz.) apples
- 150 g (5.3 oz.) carrots
- 1 piece ginger (1-2 cm / 0.4-0.8 in)
- juice of 2 lemons
- 250 g (1 1/4 cups) jam sugar 2:1
Instructions
- Wash and finely grate the apples (you don't need to peel them)
- Immediately mix them with the lemon juice
- Finely grate the carrots and add them to the apples
- Add the apples, carrots and sugar into the bread maker alternatingly
- Finely grate the ginger and add it
- Choose the jam/preserve program on your bread maker and set the time to 1 hour and 10 minutes
Notes
Tip from my kitchen: the jam was often done a touch faster than the program suggested, so check on it now and then so nothing burns. Fill it hot into sterilised jars and seal them straight away – that way it keeps for months. Grate the apple and carrot very finely for a smooth jam, or a little coarser if you like some bite. An extra piece of ginger makes it lovely and spicy-fresh.
