Hello Lovelies, I would like to share a new recipe for these Apple Chia waffles which turned out to be the best vegan waffles I made so far! Crispy on the outside – moist and sweet inside, just so good! Topped with coconut blossom syrup, caramelized pecans, apple slices, pomegranate arils and the first wild strawberries that the girls picked in front of our house! Perfect for a waffles Sunday with the family.
160 ml vegan buttermilk (made with plantbased milk and 1 tsp apple cider vinegar)
100 ml sparkling water
150 gr flour
1 tsp baking powder
Pinch of salt
Mix the milk and vinegar and set aside for ca 10 minutes so it thickens. Grate the apples and set aside as well. In a Mixing Bowl, combine the butter and sugar and mix well. Add the Chia seeds, vanilla, flour, buttermilk, water, baking powder and salt and mix until well combined. Add the grated apples and just spoon them under. Heat your waffle iron and bake delicious apple waffles.
