Hello Lovelies, a weekend without waffles or pancakes, mmhm yes possible, but we prefer to have them. And since everyone in my house loves them, I always try to come up with new recipes and flavor combinations, so no one gets bored. And since I promised you lot of healthy recipes for the new year, I wanted to create a healthy yet delicious waffle recipe for you (and for us).
I have to admit, the last waffle recipes I made have not been super successful. The flavor was good, but they tend to fall apart in the waffle iron, stick to it or would not get crispy. But it’s not as if I would give up after some set backs, not at all. This only makes me more ambitious to create a good recipe and lucky me, that’s what happened with these waffles – yeah!
The waffles turned out to be super crispy on the outside and soft inside, they did not stick to the waffle iron, even without greasing – so just how you want your waffles to be! They are refined sugar free as well as without wheat flour (both things I don’t use in my kitchen) and with the addition of the carrots and fresh orange they are also healthy.
So here is the recipe:
We enjoyed the waffles with fresh oranges, coconut yoghurt, some mint, puffed amaranth and sea buckthorn sauce – such a good combination. But the girls also liked the waffles only with maple syrup – classic! I also like to add coconut blossom syrup, since I like the caramel flavor. Please make sure you are using organic oranges for the recipe. I can’t recommend to use the zest if the oranges are not organic. And even if they are, make sure to wash them with hot water first.
The waffles are not only delicious for breakfast but also perfect for an afternoon snack with fresh fruits, and I can promise you, if you might have a picky eater when it comes to veggies, he or she could never tell there are carrots in the batter.
