Hello Lovelies, I’m back with a new recipe and this time it’s a sweet one. Do you like to eat bananas? I don’t if I’m honest. Banana would not be my fruit of choice when im longing for some fresh fruits. But we always have them at home and I love to use them. We buy them ripe and than wait for the perfect moment and for us that’s when they are at the edge of getting too brown. Than they are perfect to be frozen for delicious nice cream (we always have bananas in the freezer), we use them for smoothies, Pancakes or for baking. Due to it’s natural sweetness it’s perfect for cakes and cookies and you can substitute part of the sugar.

Since my au-pair days in Canada I really love banana bread and I always eat it when we are on vacation in the US. Nowadays it’s also getting more common in Europe and you can buy it at more places. It’s not really a classical cake, but can also be eaten for breakfast. I made a version with Chai tea this time, added pecan nuts and lot of spices. It turned out delicious and I’m happy to share the recipe with you.

Chai Banana Bread

Chai Banana Bread

Ingredients

  • 2 Tbsp Chai Tea-Mix for 150 ml water (or 2 tea bags)
  • ------
  • 2 Tbsp flax meal (+8 Tbsp water) (or any other egg replacer)
  • 100 gr raw cane sugar
  • 3 ripe bananas
  • 125 gr vegan butter
  • 1 tsp vanilla
  • 50 gr pecan nuts
  • pinch of salt
  • 300 gr spelt flour
  • 150 ml Chai Tea
  • 2 tbsp baking powder
  • cinnamon
  • cardamom
  • nutmeg
  • gloves
  • 1 Tbsp apple cider vinegar
  • 100 gr vegan chocolate chips
  • Frosting:
  • 1 Tbsp vegan butter
  • Chai Tea
  • 3 Tbsp powdered sugar

Method

  1. Preheat the oven to 180 degree C
  2. Brew the tea with 150 ml hot water and set aside
  3. Mix the flax meal (or soy meal) with the water and set aside
  4. Roughly chop the pecans
  5. Mash the bananas with a fork, than mix with the sugar, butter and vanilla
  6. Mix the flour with the baking powder and the spices
  7. Add to the sugar/butter mixture alternating with the chai tea (keep 2-3 Tbsp for the frosting)
  8. Stirr in the apple cider vinegar
  9. Spoon under the chocolate chips in the end
  10. Grease a baking pan and add the batter, bake for 40-50 minutes
  11. Frosting:
  12. Mix one Tbsp melted (cooled a bit) butter with the powdered sugar and add some chai tea until you have a creamy mixture
  13. Add to the cake (let it cool a bit first, but it should be still warm) - decorate with fresh blood oranges

You can just leave the banana bread natural if you don’t want to add the frosting, it will be delicious anyways. But the frosting with the Chai will add some extra yumminess. And if you haven’t noticed by now, I love blood oranges so much, I just had to add them as well. The banana bread is very moist, exactly how we like it (please don’t expect a fluffy cake, it’s really a typical banana bread texture).

The banana bread tastes perfect with a fresh cup of Masala Chai – of course! Did you know that Chai means tea, so we often say Tea Tea 🙂 – just a little information for you, not that it matters much.
